Enjoy the summer with your own home-made Mango Ice-Cream! Made with just four ingredients, the ice-cream is very easy to make even for kids. But don't be fooled by the simplicity - the ice-cream will be yummier and creamier than the market products, without all the refined sugar, preservatives, artificial colours and chemicals.
Ingredients:
3/4 cup fresh malai (or 1 cup chilled fresh cream)
2 ripe mangoes chopped
2 tbsp milk powder (optional)
1.5 tbsp jaggery powder (or brown sugar or maple syrup or honey)
A pinch of salt
For garnishing:
Few pieces of chopped mango
Put all the ingredients fin a blender/mixer grinder, and blend well.
Serving: 8

Protein: 1 gm
Carbs: 8 gm
Fats: 8 gm
Fibre: 1 gm
Method:
Put all the ingredients for the ice-cream in a blender/mixer grinder, and blend well. Check the sweetness, and add more jaggery powder (or brown sugar/maple syrup/ honey) as required.
Once the mixture is smooth, pour it in the tin/moulds and let it freeze for at least 4-5 hrs.
Garnish with chopped mangoes and nuts, and serve.

Mango, or the 'king of fruits, is rich in vitamins, minerals, and antioxidants. Mangoes are high in vitamins A and C, supporting healthy eyes, skin, and hair. The presence of amylase, water, and dietary fiber make mangoes good for digestive health. Further, the nutrients present in mangoes help improve immunity, have anti-cancer effects, and are good for heart health. However, due to a moderate-high glycemic index, eating mangoes may lead to a spike in blood sugar levels. So they should be consumed in moderation, especially by people with diabetes.
